Water Restoration Mead

Mead-making is generally better with spring water than with distilled water. Spring water has natural minerals that can enhance fermentation and contribute to the flavor and complexity of the mead. Distilled water has none of these, which could result in a fermentation with less vigor and a mead with a potentially flatter taste. Therefore, for a mead that is more flavorful and balanced, spring water is the better choice.

Indeed, mead can be made from water that has been purified through reverse osmosis (RO), but only if it has been carefully reconstituted. RO reduces not only the impurities that could harm fermentation but also the essential mineral content of the water. Mead makers have had variable and sometimes disappointing results fermenting with RO water.
